Simple Apple withToffee Syrup Crêpe


Simple Apple with Toffee Syrup Crêpe

Ingredients:

For the crepe:
1 cup flour
1/2 tsp baking powder
3 tbsp sugar
4 tbsp melted butter
1 egg, beaten
1 cup milk
1 can caramelized apple slices (you can also use canned peach slices)
1 can nestle cream (optional)

Mix all the ingredients to make a thick batter. Grease the pan with butter or oil. Pour half cup of batter on the pan, tilt the pan gently to spread the batter evenly. Flip the crepe when the other side is brown, approximately 1-2 minutes for each side. Repeat for the rest of the batter.

While still warm, fold the crepe in half, then fold it again in half to form a triangle. Put some sliced apple inside the folded crepe. Add cream. Then drizzle with toffee syrup.



To make the toffee syrup:

Melt 1/4 cup butter and 2 tbsp brown sugar in a pan. Add 1/4 cup milk and and bring to near boil.

Zesty Chicken Pepper Fry

Zesty Chicken Pepper Fry 


Ingredients:

2 lbs. chicken fillet, cut into smaller pieces
1 large green bell pepper, sliced
1 large onion, sliced
2 tbsp. orange marmalade (or 2 tbsp. orange juice)
2 tbsp. lemon juice
2 tbsp. brown sugar
pepper and garlic powder


Pan fry the chicken until golden brown. Add the orange marmalade, brown sugar and lemon juice and stir, let the chicken absorb the flavor for 2-3 minutes.

Add the onion and green bell pepper. Season with pepper and garlic powder.

Lechon Kawali & Lechon Paksiw

Lechon Kawali



I would like to share with you an easy Lechon Kawali recipe.


You will need:

1.5 lbs pork belly
half cup chopped garlic
2 medium onion, sliced
3 tbsp salt
1 tsp black pepper


Boil the pork belly in 1 to 1.5 liters of water. Add the garlic, onion, salt and pepper. Simmer for 1 to an hour and a half to achieve the desired tenderness of the pork belly



Place the pork belly in the rack and broil for 20 minutes, 10 minutes for each side.




After 20 minutes it should look like this.



If you will be using a convection oven, preheat to 475°F. Cook in the oven for 20-25 minutes.



Let it cool for 10-15 minutes before slicing.






Lechon Kawali




Now, for the Lechon Paksiw you will need:

1.5 lbs lechon, sliced (use the lechon kawali recipe above, set aside the broth or soup for the sauce)
half cup liver spread
2 tbsp soy sauce
half cup vinegar
half cup bread crumbs
pinch of salt
dash of black pepper
2 tsp brown sugar
2 cups pork broth
1 tsp cornstarch
1 tsp garlic powder or 2 cloves garlic, chopped


Bring the pork broth to boil. Add the rest of the ingredients and simmer for 2 minutes while stirring occasionally.



Dissolve the cornstarch in 3-4 tbsp of warm water and add to the sauce.

You can add as much sugar and salt depending on how sweet or salty you want your sauce to be.

Pour the sauce over the sliced lechon.

Oven Cooked Tilapia

Prep time is 10 minutes. Cooking time is 20-25 minutes.


Ingredients:

3 medium sized tilapia
3 large tomatoes, sliced
2 large white onion, sliced
1/2 cup butter
3 tsp soy sauce
lemon juice
salt and pepper
sliced cucumber for garnishing


How to do it:

Preheat oven to 350ºF.

Season the tilapia with salt and pepper. Make a slit on the gills of the tilapia and insert some sliced onion and tomatoes.

Brush the baking dish with butter. Arrange the tilapia with the rest of sliced onion and tomatoes on the dish. Squeeze some lemon juice.

Mixed the soy sauce and butter and pour it over the tilapia. Cover with foil. Cooked in the oven for 20-25 minutes or until the eyes pop out. Garnish with sliced cucumber before serving.
